Wow. As you can tell from my fascinating title, I am in the midst of my first meal exchange. Nine other ladies and I have been cooking up a storm in our own homes. Tomorrow I will bring 18 meals to our designated site and give 2 of them to each one of the other women. It will be a blast, I'm sure!
I have a new appreciation for the gals that cook dinner every Wednesday night at our church. It's a lot of work to cook large meals! I made Upside-Down Beef Cornbread and Monteray Jack Chicken Casserole. I would post the recipes here except I don't think I'm up to looking at those words again. It has been a loooong week in the kitchen. :)

Is this the one Jen did? I considered it - but just don't have the time to cook all those meals right now! I hope you get some great new recipes!

I am honored that you used my recipe. I love it and it sounds like you got wonderful meals out of the exchange. I would do it, too, but I think my friends are getting tired of my wild ideas. Maybe next year!
